Dark Chocolate Matcha

Valentine’s Day.

In Japan, it is a tradition for girls to offer chocolates to their boyfriends, the person they are in love with, or a close friend.

Yes, it is the woman who has to make the first step, BUT, her efforts will be repaid on March 14 during the “white day”, when it is the man’s turn to show his love.

Let’s be clear, when you’re engaged, married or in love, it’s Valentine’s Day all year round, and you don’t need a particular day to be able to show your love to your partner, and you also don’t need to buy present for him/her.

But at the same time, I don’t see anything wrong with taking advantage of this day if you want to declare yourself or show your feelings to someone.

Being the fragile person that I am, even this year I couldn’t resist buying some chocolate box (that in the end, I almost ate all by myself), and to make this day a bit more special, I also decided to bake a cake.

This is a dark chocolate cake, filled with Matcha&Yuzu cream.

The cake dough is free of butter and eggs, and I used rice flour to make it also gluten-free. As for the filling instead, I used a sweet cream to which I added the Matcha&Yuzu powder found in the box sent to me by Kokoro Care.

Let’s Cook

Preheat the oven to 170 degrees.

In a large bowl, mix the rice flour, cacao powder, sugar, baking powder, and salt.

Mix the ingredients and gradually add the soy milk, olive oil, and vanilla extract. Mix everything until you obtain a homogeneous mixture without lumps.

In a cake pan, place the baking paper (or you can spread 1 tbsp of oil), add the dough, and when the oven is ready bake for 50 – 55 min.

When the cake is cooked, we take it out of the oven and let it cool completely.

Once cold, we begin to prepare the filling.

Filling: In a large bowl combine the heavy cream, sugar, and Matcha&Yuzu powder. With the help of an electric whisk, beat until you get a firm cream.

With the help of a knife, cut the cake in half and fill it with the matcha cream. Close and sprinkle also the surface with the cream.

Chocolate glaze: Let’s melt the chocolate “a Bagno Maria”.

Break the dark chocolate and put it in a bowl.

Heat a pot of water and, when it boils, put the bowl with the pieces of chocolate on top of the pot. In this way, the heat will slowly spread around the bowl and the chocolate will start melts.

Add the sugar and slowly the water. Stir gently until everything melts completely.

Place the cake on a grid, and pour the chocolate frosting over the top. Let the cake rest in a cool place until the surface has hardened.

– Instead of Matcha&Yuzu you can use just Matcha powder, or why not, if you are a chocolate lover, why not go extra with cocoa powder?

– Instead of rice flour feel free to use regular baking flour. 

– To make a perfect cut, heat the knife blade with hot water. the result will be a perfect piece of cake!
